‘Borghesi’ sparkling Chenin Blanc (Metodo Classico NV)

Borghesi NV(non vintage) is something very special to us! The label itself is a replica of the original wine made from the Estate vineyard in the 1940's by the original owner of Swan Valley Wines- Mr Oscar Borghesi. He planted the first Chenin Blanc vines our our property with the intention of producing incredible sparkling wine. The original base wine was established in 2008 and was a mixture of whole bunched pressed 2008 Chenin blanc and Grenache. Since then, a small parcel of the original vineyard has been harvested early to beat the birds and blended into a base of wine via a modified solera. A significant portion of the blend comes from the 2011 vintage, which was considered ideal for this style. The complex base wine was triaged in 2016 and is being disgorged to order. Bottles are topped up with the 2019 vintage with zero dosage. This is a unique and rare wine, offering a glimpse into WA's winemaking heritage and the cultural identity of immigrants from Northern Italy. A traditional 'methode champenoise'- it is a wine to savour and enjoy over special or everyday celebrations. Great with homemade sausage rolls, as suggested by Mike Bennie.
