‘Wild West White’ Chenin Blanc Semillon

This label was conceived to allow for creative blending of white wine components that do not stylistically fit in the separate Semillon or Chenin blanc bottlings. The 2016 blend is centred on whole bunch pressed Semillon that was fermented in Qvevri, where a flor was allowed to develop on the surface of the wine. The minor components of the blend comprise barrique fermented Chenin blanc, and a small amount of the Italian white Greco bianco, which we typically ferment on skins. These diverse components have created a wine that is greater than the sum of its parts and an interesting antidote for jaded palates.

Tasting notes

Bordeaux meets the Loire Valley in this bold and concentrated blend of Semillon and Chenin blanc from the dry-grown Estate vineyard in Baskerville. Fermentation by indigenous yeast of the Semillon component occurred in our imported Georgian qvevri, which are buried inside the winery for natural temperature control. Chenin blanc was fermented separately in seasoned French oak barriques before blending and bottling without fining and filtration.

The Lemongrass and dried herb aromas of Semillon are immediately apparent, with orange blossom highlights. Concentrated flavours of lemon curd taper to a long and lively finish. This wine has been bottled without fining or filtration and a small edible sediment may naturally precipitate in the bottle.
